    This Study Tour experience will be led by our Head of Education, Sean Ou and Head of Liaison (Japan) Kanako Takahashi between the 19th to 24th of February with the journey starting from the coastal town of Kobe up to metropolitan Tokyo!

      Brief Itinerary:

          19th February 2023 : Pre-stay in Kobe

            You will arrive in Kobe and check-in to a hotel arranged by us, while you have the rest of the day free to explore and rest before the study tour officially begins on 20th Feb 0800H.

            20th February 2023 : Study Tour Day 1

              • Sake Making experience:
                • "Tour the prestigious Kobe Shushinkan sake brewery — creator of the world-famous Fukuju brand — in Kobe's Nada district, one of Japan's top sake-producing areas. See how sake is made, enter parts of the brewery that are normally closed to the public, taste different types of sake, follow by a sake pairing lunch in brewery.

                • "Since its foundation in 1659, during the Edo period in Japan, Kiku-Masamune has cherished and passed down the tradition of sake brewing in an unchanging manner for more than 350years. This museum is an embodiment of Japan timeless enthusiasm for sake brewing. The Taru sake meister factory introduces the techniques of Taru Bin and Taru Sake."

                  • "Daimon is a true craft Japanese sake brewery established in 1826 from Osaka Japan. Using both only the Ginjo method and with flowing mountain water - the core of their spirit, Daimon has made their mark not only in Japan but on the renowned London Sake Challenge.
                    Lunch will be served at restaurant and bar run at the brewery -- Mukune Tei."

                • Kyo Kaiseki mini lecture & Kaiseki Dinner
                  • "Originating from Kyoto, Japan, Kyō-Kaiseki cuisine is a particularly elaborate style of dining with ties to traditional Japanese tea ceremonies. Emphasis is placed on the subtle flavours of fresh, seasonal ingredients resulting in a refined, multi-course, culinary experience."

                  Tour Highlights

                  • Kizakura Visit
                    • "Located in Fushimi, Gokōnomiya Shrine is famous for its pure spring water and prayers for safe childbirth, where brewers have been praying for centuries to improve their product. Containing a stone garden, Gokōnomiya Shrine also stands out for its colorful and vibrant Momoyama-style architecture, with gorgeously renewed woodcarvings in a water motif."

                  • Fushimi Area visit & walk
                    • "Kizakura, is one of the famous brewery companies that uses Fushimuzu. You will notice a unique characters, called “Kappa” when visiting Kizakura. This”Kappa”(a imaginary creature in Japan) is the image character and symbol of Kizakura. They even have a “Kappa song”!
                      Kizakura brews not only sakes, they also brew unique beers using sake yeast and have lots of flavours. "

                    Tour Highlights

                    • Shoyu Factory visit
                      • "Meijiya Shoyu was established in the 8th year of the Meiji era (1875), and its technique has been closely protected as it has passed down the generations of this family run company.
                        Getting a glimpse of the history and method by taking a tour inside the Meijiya, which explains the production process, equipment, machines and materials which are indispensable for making soy sauce, providing a deeper knowledge about soy sauce and its integral role in Japanese food culture.
                        A special workshop presses is provided for visitor to try soy sauce squeezing. That soy sauce is then pasteurized and bottled, so it's possible to take home with a handmade soy sauce at room temperature."

                    • Brewery Visit in Kakegawa
                      • "Visit the Doi Sake Brewery, which is known for its famous sake "Kaiun," but is not open to the general public. Kaiun has repeatedly won top prizes at numerous competitions, including the National New Sake Appraisal, and has greatly contributed to the development of ginjo yeast."

                    • Onsen Hotel
                      • "Check in to Kamenoi Hotel Atami, enjoy view of downtown Atami and beautiful ocean. Atami is a cultural landmark with healing waters where Japanese – including Edo Shogun Ieyasu Tokugawa – have been visiting for over 1,000 years. The town’s sulfate and salt-rich hot springs are great for relaxing the entire body and healing minor aches and pains. Dinner will be served in mini-kaiseki styles"

                      • Brewery Visit in Kanagawa
                        • "Based on the belief that "sake making starts with rice", Izumibashi Sake Brewery is working on making sake rice in Ebina City and neighboring areas. The sake is carefully brewed from reliable rice grown with the blessings of the sun and the earth. They also produces junmai umeshu, miso & soy sauce, and amazake."

                      • Shochu Session @ JSS
                        • "With more than 500 years of history, Shochu is a culturally rich spirit that represents the regional diversity and agricultural traditions of Japan. A Sochu session with Japan Sake and Sochu Makers Association to understand this unique distilled spirit from Japan more in depth. "
