Experience the deep connection between land, culture, and craft in this in-depth masterclass featuring the shochu producers of Miyazaki—one of Kyushu’s most celebrated spirit-producing regions. Known for its rich agricultural landscape, Miyazaki brings together pristine water sources, locally grown sweet potatoes and barley, and centuries-old fermentation practices that shape the region’s unmistakable shochu identity.

You’ll begin with the fundamentals: the role of koji, ingredient variations, fermentation science, and why shochu’s single-distilled nature creates such expressive flavour. Alongside these technical insights, you’ll discover the stories of the distilleries themselves—their family histories, philosophies, and unwavering dedication to preserving tradition while embracing innovation.

Come experience the perfect balance of tradition and innovation in person along with the Kuramotos from Osuzuyama Distillery, Shoro Shuzo and Yanagida Shuzo.

Masterclass Presenter : Kanako Takahashi

Born in Japan, J.S.A Sake Diploma International holder, International Japanese Sake lecturer, WSET Level 3 in Sake, in Wine, Academy of Cheese member, and Cheese instructor.

Leveraging experience in wine events and Japanese sake education in London, I serve as a communication liaison with Japan, and as a speaker at various events to convey the qualities of different sake brands and products. I am also involved in developing educational programs for Japanese sake and shochu.
