About this course:

The advanced level Chinese Baijiu Certificate (CBC) is designed for those who seek to deepen their knowledge of Chinese Baijiu, focusing on understanding its historical significance, production techniques, and diverse flavor profiles.

The course aims to provide participants with comprehensive knowledge that will allow them to distinguish between different types of Baijiu and develop advanced tasting skills.

Course objective:

After completing the course, you will be able to: 

  • Gain a deeper understanding of various Baijiu production regions and characteristics of different aroma types.
  • Learn the distinction between major Baijiu producers, and how industry leaders rose to prominence.
  • Analyze current trends in the Baijiu market, and explore the future potential of aroma-rich Baijiu varieties.
  • Develop the skills to differentiate quality levels of Baijiu, through a better understanding of raw materials, production methods, and quality indicators.
  • Understand the unique elements of Baijiu production.

Course Outline:

  • Introduction to the Baijiu Industry: Overview of Baijiu production regions and the major production belts in China. History and evolution of the Baijiu industry, including insights into leading Baijiu producers.Market analysis with a focus on the rise of sauce-aroma Baijiu and its future potential.

  • Baijiu Production Techniques: In-depth exploration of the raw materials used in Baijiu production. Understanding the role of fermentation starters (qu) and their impact on Baijiu aroma and quality. Detailed breakdown of production techniques for major aroma types. Learn the processes behind Baijiu aging and flavor design.

  • Twelve Aroma Types of Baijiu: Introduction to the four basic aromas and the eight derivative aroma types of Baijiu. Tasting and comparison of representative Baijiu brands from each aroma category.

  • Advanced Baijiu Tasting and Evaluation: Learn to assess Baijiu quality through color, aroma, taste, and overall balance. Develop blind tasting techniques and understand the key factors in Baijiu scoring and evaluation.

Duration:

16 hours (Assessment in 2 weeks' time)

Course assessment:

1 hour - Multiple Choice Questions, Short Answers Questions and Blind Tastings. 60% passing marks

Entry Requirements:

This course is open to students who has passed the basic CBC course. You must be of legal drinking age to participate in any alcohol tasting. However, this is not a barrier to successfully completing the qualification.

Certification:

 Upon successful completion of the course, a certificate suitable for framing and a lapel pin from Chinese Baijiu Certificate (CBC) will be awarded.
