About this course:

This entry level Chinese Baijiu Certificate (CBC) program is dedicated to educating individuals about Baijiu, the world's largest category of spirits. Despite its global prominence, Baijiu remains under appreciated by much of the younger generation.

This program aims to bridge the knowledge gap by aligning with international tasting standards, fostering a deeper understanding and appreciation of Baijiu on the global stage

Course objective:

After completing the course, you will be able to:

- Understand what Baijiu is, including its production process and historical background.
- Learn how to drink Baijiu professionally and discover its complex flavours.
- Develop the ability to distinguish between different Baijiu aroma categories.
- Learn how to identify a bottle of quality Baijiu.
- Understand the differences in Baijiu fermentation starters.
- Understand the factors that influence Baijiu pricing, even within the same distillery.
- Compare Baijiu with other spirits like whisky and brandy to highlight key differences.
- Differences between aged and new Baijiu and determine which types are best suited for aging.

  • The History and Evolution of Baijiu: The origins and legends, the invention of distillation technology, and the definition of Baijiu.

  • Factors Influencing Quality and Brewing: Quality factors, types of fermentation starters, and the Baijiu brewing process.

  • Types and Categories of Baijiu: Classification based on raw materials, production process, and aroma types.

  • Baijiu Tasting Techniques: Colour observation, aroma analysis, taste evaluation, and assessment

Course assessment:

20 Multiple Choice Questions by the end of the day.

Entry Requirements:

There are no entry requirements for this qualification. You must be of legal drinking age to participate in any alcohol tasting. However, this is not a barrier to successfully completing the qualification.

Certification:

Upon successful completion of the course, a certificate suitable for framing and a lapel pin from Chinese Baijiu Certificate (CBC) will be awarded.
